Finally: the birthday cake recipe

Several weeks back, Kevin promised a number of folks the recipe for Gwendolyn's birthday cake: a lovely, moist, cinnamon and applesauce creation that surprisingly does not contain eggs. What better place to share it than here?

Kindergarten Cake

1 cup oil
1 cup maple syrup
1 2/3 cup applesauce
4 teaspoons vanilla
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon (recommended, but optional)

Mix and bake at 350 for 45-50 minutes (bakes more quickly in a shallow pan)

Frosting

8 ounces softened cream cheese
¼ c maple syrup
